Butterfly Kisses

Known as the 'fruit of the gods' by the ancient Greeks, Persimmons were cultivated in China more than 2000 years ago and introduced to Japan in the 7th century and Korea in the 14th century. They are associated with good luck and longevity.

The medicinal value of persimmon bark and fruit was touted in a number of 19th century cures and they are thought to have mystical powers to aid aches and pains.

The variety Rojo brillante (bright red) is grown in the Ribera del Xúquer Valley, near Valencia. This fruit has pale orange flesh and tastes like a cross between a mango and a pear. It is an ideal winter fruit as it’s rich in Vitamin C, has twice as much fibre as an apple and due to a high content of glucose, makes a perfect pre-workout snack.

Butterfly cakes are quintessentially English and a favourite of mine since I was knee high to a grasshopper and are a little bite of loveliness compared to their bold and brassy cousins, muffins.

These unguilty little pleasures are made from silky kefir a naturally fermented bio-live milk, originating from the Caucasus mountains some 2000 years ago and often referred to as 'the champagne of milk' as it supports digestion and immunity and boosts energy levels. Kefir literally means ‘long life’ or good life’ in old Turkish. Sweetened with toffee flavoured Barbados sugar, enveloped in a huge hug of xmas spice, chunks of persimmon and topped with a sprinkling of fairy dust from God's own country, Yorkshire.

Ingredients

20-25 minutes
12 servings
  • 225 gorganic buckwheat flour
  • 1 1/2tsps baking powder
  • 1/2 tspbicarbonate of soda
  • 1 tspXmas spice (mixed spice)
  • 2persimmon
  • 1medium egg
  • 100 glight brown Barbados or muscovado sugar
  • 100 gunrefined golden caster sugar
  • 60 gsalted butter, melted
  • 170 mlkefir
  • 60 gYockenthwaite ginger granola
  • 10 gpecans, chopped (optional)
  • Xmas spice
  • 1 tbspground cinnamon
  • 2tsps ground allspice
  • 2tsps ground nutmeg
  • 2tsps ground ginger
  • 1 tspground cloves
  • 1 tspground coriander
  • 1 tspmace

Steps

20-25 minutes
  1. 1

    Preheat the oven to 180°C, gas mark 4 and line a 12-hole fairy cake mould with paper muffin cases. Combine the xmas spice mixes together. Place the flour, baking powder, bicarb of soda and 1 teaspoon of mixed spice in a medium bowl and stir until well combined.

    Thinly slice one persimmon half and dice the remainder. Stir the diced persimmon into the flour mixture and set aside the slices for the top.

    In a separate bowl, beat together the egg and sugars until pale and creamy. Beat in the melted butter until just combined, then add the kefir and beat again until incorporated. Stir the dry ingredients into the wet mixture, folding with a spatula until the batter just comes together.

    Crush the granola and pecans. Spoon the batter mixture into the paper cases, topping each one with a scattering of the granola/pecans. To make butterfly wings, push two slices of persimmon into each cake at a 45 degree angle.

    Bake for 20–25 minutes, until a skewer inserted into the centre of a fairy cake comes out clean. Leave to cool. Eat with a dollop of kefir cream.
