My wife showed me a salad she made like this somewhere else, and I told her I would make it too, adding my own twist. It turns out it's really delicious and brings a great variety of flavors.

My wife showed me a salad she made like this somewhere else, and I told her I would make it too, adding my own twist. It turns out it's really delicious and brings a great variety of flavors.

First, soak the salted cod in water for several hours to remove excess salt. Then peel the carrots and potato, and blanch them in salted water for about 10 minutes. Cut the cod and vegetables into small pieces.

When the potato and carrot are just tender, drain and set aside.

In a skillet with hot oil, sear the cod, then add the bell pepper and onion. Sauté until slightly golden. Add the ground black pepper.

Mix in the potato and carrot.

Add the tomato, cut into strips, and the cilantro. Stir well and let sit for a few minutes to let the flavors blend. Serve and enjoy.
