Sweet Potato Cookies

I make these as a snack when I'm dieting.
For non-dieters, substitute butter for vegetable oil. They're even more delicious that way.

Straining the sweet potatoes gives a smoother texture, but if it's too much trouble, just mashing is fine!
Be sure to bake them to a nice aromatic finish. Recipe by ayayanmom

  1. 180 gramsSweet potato
  2. 30 gramsSugar
  3. 100 gramsCake flour
  4. 1/2 tspBaking powder
  5. 50 mlVegetable oil
  6. 1 tbspBlack sesame seeds

Steps

    Put the sweet potato in a silicon steamer and microwave until tender. While still hot, scoop out the flesh, add sugar, and pass through a sieve to strain.

    Combine cake flour and baking powder in a bowl, and whisk until smooth and fluffy.

    Add strained sweet potato and vegetable oil to the dry ingredients and mix.

    Once the batter forms a dough, wrap in plastic wrap and chill in the refrigerator for 20 minutes.

    Roll out the dough to 5 mm thickness, then cut with a cookie cutter. Sprinkle black sesame seeds and bake for 15 minutes in an oven set to 360°F/180°C.
