My Family's Dashimaki-style Sweetened Tamagoyaki Omelette

This recipe has was based on a request from my family who loves sweet tamagoyaki.
When you pour the egg mixture, lift the already cooked egg roll and allow the uncooked mixture to spread underneath.
When the new omelette layer starts to set, roll it around the already cooked egg towards the opposite end.

Cooking Instructions

Crack eggs into a bowl and beat. Combine katakuriko and water, stirring well. Pour the dissolved katakuriko into the egg and whisk.

Add all ingredients marked into the bowl at Step 1 and mix well. Adjust mayonnaise and sugar to your taste.

Heat an omelet frying pan that's just covered with oil. Pour half of the egg mixture to evenly coat the surface.

Move the egg mixture in the frying pan to the far end as you stir and cook until mixture just starts to set. Divide the remaining egg mixture into 2-3 portions and pour in separately. As each layer of egg just sets, it should be rolled up around the already cooked roll. Please refer to Helpful Hints.
