(Ginger Ankake Sauce) 1: Combine the water, mentsuyu, mirin, and dashi stock granules to a pot and bring to a boil.

2: Add the katakuriko slurry to thicken the sauce and then stop the heat. Stir in the grated ginger.

In a separate pot, add water (not listed) and the silken tofu. Turn on the heat and heat.

Remove the tofu from Step 3 and place it on a dish. Top with the ginger ankake sauce from Step 2 and green onion.
