This cake, packed with lots of carrot puree, has a very moist and soft texture. If your kids dislike eating carrots, make this carrot cake for them.
Steps

Blend the soy milk and carrots in a blender until smooth.

In a bowl, mix the eggs, sugar, and vegetable oil until well combined.

Add the carrot puree and mix well.

Sift in the flour, baking powder, and cinnamon, and mix until smooth.

Add the raisins and mix well.

Pour the batter into a cake mold and tap gently to remove air bubbles.

Sprinkle some sliced almonds on top and bake in a preheated oven at 350°F (180°C) for 40-45 minutes.
