Zucchini roll ups lasagna (Vegetarian oven baked)
Cooking Instructions

In a pan, heat the olive oil over medium heat. Add garlic and saute. Add the crushed tomatoes puree, salt, black pepper, oregano, red chilli flakes and bay leaf. Stir and reduce heat to low. Cover and let simmer about 15 minutes. Remove from heat. Marinara sauce is ready.

Remove the ends of the zucchini and cut it lengthwise into thin slices using a sharp knife. Brush them with some olive oil on both sides and place on a plate and Sprinkle pinch of salt all over it. Keep for some time so it becomes soft enough to roll.

In a bowl, mix ricotta cheese with chopped basil, nutmeg powder, chili flakes, salt and pepper. Mix it well. Now Spread a thin layer of the stuffing on the slice and roll it.

Top each roll with marinara sauce and bake for 20 minutes, or until cheese melts. Serve with Parmesan cheese sprinkled on top. Enjoy
