Steps

Take a deep bowl and add salt, 2 tsp ghee, and maida and rub the ghee nicely with maida until it gets a coarse texture.

Add little water at a time and knead into a stiff dough.

Cover and keep aside for 30-35 minutes.

Take the 1/2 cup ghee in a bowl and add rice flour.

Beat it well until the mixture becomes light and fluffy.

Take the dough and knead it again to make it soft.

Divide the dough into 6-8 equal portions.

Roll all the balls thinly like a chapati.

After rolling, take one chapati and spread the above mixture on it.

Put another chapati on it, and spread the mixture again on this.

Repeat the process for all 6 layers.

Roll this with your hand like how you would make a chapati roll.

Cut the roll into 6-8 equal sized pieces.

Take one piece of the roll (chirote) and roll it flat into a medium thick disc.

Heat the oil in a deep pan on medium heat.

Drop a chirote into the oil and fry on low heat.

Fry it well from both sides till light golden colour.

When chirote are fried perfectly, put them in a plate.

Sprinkle some powdered sugar immediately. You can also drop them into sugar syrup if you want.
