Roasted root veggies (celeriac, potato and carrots)
Feta cheese
Tuna or salmon in brine
Nuts of your choice
Dressing
2roasted garlic cloves
Olive oil
2 tablespoonsbalsamic vinegar
1 tablespoonglazed balsamic vinegar (replace with teaspoon honey if not available)

Crush the two roasted garlic cloves, add the oil, balsamic vinegar, dijon mustard, salt and pepper. Mix to form the dressing

Pour the dressing over the roasted veggies and combine

Add the tuna and feta cheese crumbles on top with another drizzle of olive oil and some nuts of your choice
