Borek or burek is a mediterranean dish. It's a baked dish a kind of a pastries filled with veg or non-veg filling. The pastry dough are very thin sheets called as phyllo. It's a very common turkish snack. So let's make a Borek with minced meat.

Borek or burek is a mediterranean dish. It's a baked dish a kind of a pastries filled with veg or non-veg filling. The pastry dough are very thin sheets called as phyllo. It's a very common turkish snack. So let's make a Borek with minced meat.

Making of the filling
In a pan heat up the oil and add the onions saute it until translucent then add the ginger and garlic paste saute for 2 minutes then add the mince and mix it very well. Add salt to it and add the tomatoes and mix it. Then add all the spices and give it a good mix. All the process till now should be done on a high flame. Now check your minced meat balance the flavours upto your taste and then add half cup of water mix it, cover and cook till completely done. - 2
And all the water dried out. Add some chopped coriander leaves to it.(optional). The filling is ready.
IMPORTANT
Feel free to use more or less spices according to your taste or you can skip all the spices cook only with onion, ginger, garlic, salt and pepper. Totally up to you. - 3
Making of pastry sheet or Phyllo
In a bowl add the flour and salt and mix it. Now add little water at a time kneading into a soft and smooth dough. Knead it for a good 10 minutes then cover it and allow it to rest for 25-30 minutes. Make 8-9 balls from the dough of equal size. Then roll it out dusting the corn flour into a small disc shape. When all the balls are rolled out into almost same size small disc then put it all together one upon another dusting a generous amount of cornstarch. - 4
In between the sheets so that it couldn't stick. Now roll them again all together checking the cornstarch in between. It you find the discs sticking again dust the cornstarch on every layer. Make it as thin as you can see your fingers through it. Now seprate every wrap clean the excess flour and then fold it twice and keep it in a air tight container with a cling film in between every wrap. Keep it in a refrigerator and it will be good for 7-8 days and 18_20 days in a freezer.

IMPORTANT
With the same Phyllo sheet or wrap you can make the greek dish baklava. You can even use this as a spring roll sheet and many other filling snack recipe. - 6
Making of the sauce
In a bowl add everything together and give it a good mix. Whisk it around 2 minutes and your are done.
IMPORTANT
You can make any type of white sauce as per your taste and like. You can simply mix mayonnaise with some spread cheese or sour cream. - 7
Assembling and Baking
Take the Phyllo sheet and spread a teaspoon of sauce all over. Then add the filling as much you like. Then roll it out tightly forming a log. Now from one end start rolling it and make a swirl alike shape and put some sauce at the other end and tuck it so that it couldn't open while baking. Make all the other borek the same way. Now grease the baking tray place the boreks on it leaving some space in between. Beat an egg in a bowl and egg wash all the boreks from all sides. - 8
Now bake it in a preheated oven at 190°c for 25-30 minutes or until its golden brown in colour. Take it out from oven cool down a bit and serve hot with the same prepared sauce or tomato sauce/ ketchup/ mayonnaise anything of your choice.

IMPORTANT
You can even cook it on a stope top simply brush one side with oil keep it in a pan cover it and cook it on a low flame once get a beautiful brown colour apply oil on other side flip it and cook it till brown in colour.
In place of egg wash you can do milk wash if you want to avoid egg.
You can make any filling of you choice use paneer filling or tofu or even mushrooms or mix veg filling any thing just make sure all the water of the filling must dry out. - 10
