Prepare the dough in a stand mixer or by hand by mixing all the ingredients together (use water at about 86°F/30°C to dissolve the yeast). Let the dough rest for two hours.

Thinly slice the onions and sauté them in a heavy-bottomed skillet. Roll out the dough thinly and spread the sour cream on top. Lightly salt, then add the sautéed onions.

Slice the blue cheese and place it over the onions. Bake for 15 minutes at 430°F (220°C).
