Ingredients

4 - 6 servings
  • 4large eggs
  • 12 ozMexican Blend shredded cheese (you can use what you like)
  • 1& 1/4 cup Half & Half cream
  • 8 stripsfully cooked chopped bacon (I prefer thick cut)
  • 2-1 lbsbags of frozen tater tots

Steps

  1. 1

    Mix eggs, milk and 1 cup of Mexican Blend cheese to an oven safe baking dish. You can also add shredded cheddar cheese to your Mexican Blend shredded cheese if you'd like, or use your own choice of cheese.

  2. 2

    Sprinkle a small amount of chopped bacon on top of the cheese mix and then cover with 1lb of tater tots.

  3. 3

    Repeat the first two steps finishing by topping your dish off with the last pound of tater tots.

  4. 4

    Bake at 375° covered for 40 minutes, then an additional 20 minutes uncovered.

  5. 5

    Remove the dish and add a little more cheese to the top and turn on broil for 5 minutes, give or take, to get a nice crispy cheese topping.
