Cooking Instructions

Crush the biscuits, slowly add butter/ghee/milk until you get the crumbly sand texture.

Spread it at the bottom of the springform and put it under refrigeration.

Meanwhile, prepare the filling by whipping paneer and curd until it turns creamy.

Add pistachio paste and saffron-mishri-milk liquid and mix well.Also add whipped malai.

Check the sweetness of the batter.If you want it more sweet add honey(it lends a beautiful flavour)

Lastly, to set the cheesecake, add agar agar powder(nicely mixed in warm water) to the batter

Pour the batter over the biscuit base and sprinkle some more saffron-mishri-milk to create some swirls.

Put it to set in the refrigerator for minimum 4hrs or overnight

Garnish with chopped pistachios, dried rose petals and saffron
