Cooked mince meat is always stored in my fridge. This is one way to utilise it for a quick lunch.
Steps

First, mincemeat.
Heat a pan in middle heat, add mincemeat to the pan and stir till the meat is cooked well and moisture within it goes away to some extent. - 2
Add garlic and ginger to the pan.
Stir till you feel the flavour for 1-2 min. - 3
Add sweetened soybean paste and chilli bean sauce.
Stir till it gets the flavour for 1-2 mins.
Remove from heat. - 4
Then start to prepare udon noodles.
Boil udon for the instructed time. - 5
While boiling the udon, mix all other ingredients for the udon in a bowl together.

Once boiled, drain the udon and pour into the bowl. Mix well with the sauce.

Finally, put the udon in a serving bowl with the mincemeat, chopped spring onion and dried bonito on it. Place a yolk on the top.
