Ingredients

1 serving
  • Mince meat (suitable for frozen, so cook in bulk for future :) )
  • 50 gmince meat (beef or pork)
  • 1 tspsweetened soybean paste (甜麺醤)
  • 1 tspchilli bean sauce (豆板醤)
  • 1/2-1 clovegarlic, minced
  • 1/2 cloveginger, minced
  • Udon noodles
  • 1 packudon (200g)
  • 5 mlsoy sauce
  • 1 pinchsugar
  • 5 mlsesame oil
  • 1/2 clovegarlic minced
  • Toppings
  • 10 cmspring onion, chopped
  • 1egg yolk (use an egg suitable for eating raw)
  • (optional) 3 pinches dried bonito flakes (katsuobushi 鰹節), coarsely ground by hand

Steps

  1. 1

    First, mincemeat.
    Heat a pan in middle heat, add mincemeat to the pan and stir till the meat is cooked well and moisture within it goes away to some extent.

    Add garlic and ginger to the pan.
    Stir till you feel the flavour for 1-2 min.

  3. 3

    Add sweetened soybean paste and chilli bean sauce.
    Stir till it gets the flavour for 1-2 mins.
    Remove from heat.

    Then start to prepare udon noodles.
    Boil udon for the instructed time.

  5. 5

    While boiling the udon, mix all other ingredients for the udon in a bowl together.

  6. 6

    Once boiled, drain the udon and pour into the bowl. Mix well with the sauce.

  7. 7

    Finally, put the udon in a serving bowl with the mincemeat, chopped spring onion and dried bonito on it. Place a yolk on the top.
