It is a very simple dish in which baby eggplant is stuffed with spices .
Steps

First wash brinjals very well & wipe them. Now slit these brinjal lengthwise from base. Stalk should be intact.

Now dry roast peanuts, coriander seeds, cumin seeds & fennel seeds in a pan. Take it out & let it cool. Now take it in a blender & add all other spices to make a fine powder.

Stuff this spice powder into brinjals. Now heat mustard oil in a pan, add asafoetida to it. Now add stuffed brinjals to it.

Cover it with a lid & cook till brinjals become tender. Our stuffed brinjals are ready. Serve it with roti or any type of paratha
