Shahi Stuffed Pointed Gourd Sabji (Shahi Bharwa Parwal Sabji)

Shahi Stuffed Pointed gourd Sabji (Bharwa Parwal – Parwal /potol /patola) is a popular vegetable in North India specially available during summers and monsoon. It has many health benfits, is low in cholesterol and fat. Is very easy to digest so recommended for the patients with weak digestion .
It is antipyretic,laxative,helpful in treating jaundice,ulcers and other liver problems. So its good to include this vegetable in your diet during summer and monsoon season.

First wash and clean the pointed gourd, cut a small portion from both sides and make a cut in the middle. (If you want, you can peel the pointed gourd. I have cut the pointed gourd with the peel.)

Now we will make the Shahi Masala to fill in this pointed gourd. In a pan add peanuts, cashews, white sesame seeds, cumin seeds, whole dry coriander seeds, whole red chillies, cardamom, cloves and cinnamon pieces and dry roast the spices for 2 minutes. Cool the spices and grind them in a fine powder foam in a mixer.

Then take this masala in a plate and add salt, turmeric powder, coriander cumin powder, asafoetida and oil and mix well.

Now fill this masala in the pointed gourd. Arrange the pointed gourd in a pan, add oil on top and cook on high flame for 1 minute so that the oil gets hot. Immediately cover and cook on low flame for 5 minutes.

Then add Kashmiri red chilli powder and mix by rotating the pan. Add the extra masala to the sabji, rotate the pan and mix, add water to the lid and cook on low flame for 10 minutes.

Now add the hot water that was on top of the pan to the sabji and cook with the lid on till the oil is released. After the oil is released, add sugar, lemon juice and green coriander leaves, mix and turn off the gas flame.

Now our royal, masaledar and delicious Shahi Stuffed Pointed Gourd Sabji is ready for serve. Garnish with green coriander leaves and serve. This sabji is fun to eat with roti or paratha.
