Ingredients

1 hour
Serves 2–3 or more. Use a large pot.
  1. galangal
  2. lemongrass
  3. leaveskaffir lime
  4. shallots
  5. red Thai chilies
  6. 3/4 cupcanned coconut milk (200 ml)
  7. 5chicken drumsticks, chopped
  8. salt, tamarind paste, sugar, seasoning powder
  9. 2 cupswater (500 ml, approximate)
  10. cabbage

    Pour the coconut milk into a large pot, then add the water.

  2. 2

    Add the soup aromatics (galangal, lemongrass, shallots), but do not add the kaffir lime leaves yet.

  3. 3

    Once it starts to boil, add the chopped chicken. When the chicken is almost cooked, add the cabbage.

  4. 4

    When the cabbage is nearly tender, add the kaffir lime leaves. Let it come to a boil, then turn off the heat. (I season the chilies separately in another pot in case kids are eating.)

  5. 5

    Season to taste with salt, tamarind paste, sugar, and seasoning powder. Stir often to prevent the coconut milk from separating.
