Cooking the medallions on a griddle means you don't need to use much oil.

Measure and cut the ingredients. Pat the pork medallions dry with paper towels.

In a small bowl, mix the seasonings. Season the medallions and drizzle both sides with olive oil.

Heat a steel griddle well. Sear and cook the medallions on both sides.

Serve with brown rice, shiitake mushrooms, and sautéed vegetables.
