Boil the potatoes peel it off and mash it don't make a paste the chunks give it a great flavour and texture too. Prick the brinjals rub some oil on it put garlic cloves in each prick of brinjals roast it directly on the flame once done remove the skin finely chop or mash the brinjals along with the garlic cloves in it.

Now roast the tomatoes peel off the skin finely chop it add some finely chopped onions,green chillies, garlic,lemon juice,a lot of coriander leaves,a big dash of mustard oil,salt and mix it all very well. Taste it and adjust the salt and chillies.

You can use even olive oil to it but the mustard oil gives a great taste and desi punch to the dish. Enjoy it with litti/bati/bhauri/naan whatever you like or even rotis too.
