Remove the heads and shells from the shrimp. Make a slight cut along the back and remove the vein. Thread the shrimp onto the skewers from the tail to where the head was. Drizzle with a little oil, salt, freshly ground pepper, thyme, and red pepper flakes.

Heat a grill pan and cook over medium heat for 2 minutes on each side. Do not cook longer, as they will become tough. We want them juicy.

In a bowl, combine all the dressing ingredients. Mix very well, and once the skewers are ready, drizzle them with the dressing. Ready to serve!
