Ingredients

10 minutes
  1. 15-20fresh or frozen shrimp
  2. 15-20skewers
  3. salt, freshly ground pepper, olive oil, red pepper flakes, thyme
  4. Dressing:
  5. juice and zest of 1 lemon
  6. juice of 1/2 orange
  7. 1 clovegarlic, grated
  8. 1 tablespoonmustard
  9. 1 tablespoongrated ginger
  10. 1small chili pepper, finely chopped (optional)
  11. 2 tablespoonsolive oil
  12. salt and freshly ground pepper

  1. 1

    Remove the heads and shells from the shrimp. Make a slight cut along the back and remove the vein. Thread the shrimp onto the skewers from the tail to where the head was. Drizzle with a little oil, salt, freshly ground pepper, thyme, and red pepper flakes.

    Heat a grill pan and cook over medium heat for 2 minutes on each side. Do not cook longer, as they will become tough. We want them juicy.

    In a bowl, combine all the dressing ingredients. Mix very well, and once the skewers are ready, drizzle them with the dressing. Ready to serve!
