Egg Kofta is a very rich tasty food which can be a Sunday lunch and would go best with Lachha Paratha or Rice or Tandoori Roti.

Steps

For Nargisi Egg Kofta - boil eggs, peel and set aside. Take Chicken and add to a blender. Run on pulse mode to make coarse qeema

To it add roughly cubed onions, Coriander leaves, chillies and run in pulse mode

To it add ginger-garlic paste and run in pulse mode. To it add red chilli powder, coriander powder, cumin powder, garam masala powder, salt and turmeric powder. Run in pulse mode

To it add Chickpea flour and run one more time, set aside.

Take oil and grease your palm. Take a portion of the qeema and flatten on your palm evenly(this step is important). Add one boiled egg in the centre and fold the qeema on it from all sides and do it evenly. Set aside

Complete the batches.

In a wok heat adequate oil and add the Kofta. Shallow fry and turn golden in colour, set aside. Complete the batch.

For Curry - in a wok heat 1 Tbsp oil, add fried onions and on medium flame stir for 2 mins, add ginger garlic paste and stir for 2-3 mins to soften the onions. Add tomato purée and stir for 3-4 mins to mix well and get rid of the raw smell. Oil would surface at this time. Add red chilli powder, Kashmiri red chilli powder, cumin powder, coriander powder, salt and garam masala powder. Mix

Add 1 Tbsp hot water and stir for 1 min. Add the Kofta gently and add 1 Tbsp hot water and smear the Kofta well.

Add 1 cup hot water and mix. Cover to cook on medium flame for 8-10 mins

The curry is ready, set aside

Plate with rice or Lachha Paratha or Tandoori Roti and garnish with coriander leaves. Enjoy!
