Chicken Mole - with Chocolate

Ingredients

45min
4-6 (or easy to half)
  1. 4Large Chicken breasts or 6 small (bone in best but boneless also works)
  2. 3 TBLVeg Oil
  3. 1Large chopped onion
  4. 1/2 tspCinnamon
  5. 1/8 TspClove powder
  6. 4Large Chipotle Chilies (Deseeded)
  7. 1 TspSichuan Pepper Corns (really they are berries not pepper)
  8. 2 ClovesGarlic
  9. 1 TBSdark cooking choc
  10. 1 (14 oz)tin Chopped Tomato
  11. 1/4 CupRaisins
  12. 1/4Almond Butter
  13. 2 Tblspoon Sesamy seeds
  14. 1Hard Boiled Egg or Sliced Alonds to serve (or sprink more Sesamy seeds)

Cooking Instructions

    Rip up the chilies and toast in a dry frying pan for about 3 mins they should JUST start to smoke - turn out onto a dish for later.

    Add the oil to the same pan on a medium heat and soften the chopped onion (about 5 mins)

    Add the Cinnamon, cloves, Chocolate and Add the chilli back - bloom the spicies for 2 mins then add the crushed garlin and cook 2 more mins

    Add Chicken Stock and Tomatos, Almond butter and sesamy seeds. Simmer for around 10 mins until reduced and sauce has thickened.

    Put into a Food Blender and blend until really smooth. Taste and add salt pepper and a llittle sugar to taste.

    Place the Chicken into a oven proof dish and poor over the sauce. you need to move the chicken around a little to coat all sided. Put uncovered into a preheated 210c Oven for around 30-35 mins until internal 75c. Add a sliced boiled egg or almond slivers and serve with rice - ENJOY

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
