In a bowl, beat the egg, then add the other ingredients one at a time, adding the flour last.

For the filling, fill 4 panzerotti with ham and mozzarella, and the other 4 with cherry tomatoes and mozzarella that have been tossed with olive oil, salt, and oregano.

Knead everything together, then let the dough rise for at least 3 hours.

Turn the risen dough out onto a floured surface and shape it into a log. Divide it into 8 pieces.

With floured hands, shape each piece into a ball.

Take a ball and flatten it with your hands to form a round shape. Repeat with the remaining balls.

Now fill them: 4 panzerotti with diced cooked ham and mozzarella, and the other 4 with cherry tomatoes, mozzarella (previously tossed with olive oil, salt, and oregano), and anchovies.

Bake at 350°F (180°C) for 15 minutes.
