Ridge gourd fry is a very simple recipe. Ridge gourd is one of the most commonly used vegetable in Indian cuisine . Ridge gourd is used to make curry added to dals & even made to a spicy chutney . I am sharing a simple ridge gourd fry recipe which turns out delicious and so simple to make few minutes.

Wash and peel the skin of ridge gourd. Cut into small cubes.

Heat oil, splutter mustard and urad dal, dry red chilli, onion, curry leaves fry it. Then add ridge gourd, turmeric powder,cumin powder,salt and water.

Mix well and sauté in low flame. Cover and cook till ridge gourd become soft.

Ridge gourd shrinks in quantity once it’s cooked. Do not cook mushy. finally add 1egg and cooked few minutes. Then switch off the flame.

Serve with any rice.
