This recipe was created to use up a forgotten bag of frozen minestrone in the freezer. Unfortunately, the temperatures have been quite high lately, so I combined it with a craving for couscous, resulting in this colorful dish.

This recipe was created to use up a forgotten bag of frozen minestrone in the freezer. Unfortunately, the temperatures have been quite high lately, so I combined it with a craving for couscous, resulting in this colorful dish.

Pour a drizzle of olive oil into a pan and sauté the thinly sliced onion.

Add the frozen minestrone and gently help it thaw with a spatula.

After a few minutes, pour in a cup of water, add salt, and a grind of black pepper. Let all the water evaporate and then turn off the heat.

Prepare the couscous according to the package instructions, then top with the minestrone, a sprinkle of turmeric, and a drizzle of olive oil. Enjoy!
