Honey Walnut Shrimp
Copycat recipe for Walnut shrimp at AZN

Add the egg white to the shrimp, stir to coat well. Rinse the walnuts with water, drain and set aside. Chop the red pepper into small pieces.

In a large bowl, stir together the mayonnaise, honey, condensed milk and lemon juice.

Prepare the caramel glaze by heating up 1/2C of water until boiling. Add in the sugar and keep stirring until it turns a golden color. Add the walnuts into the caramel. Lower the heat for another 1-2 minutes, then remove the walnuts and place them on parchment paper to dry. Make sure the walnuts are not sticking together.

Heat up the oil in a pan. Once the oil is medium high, coat the shrimp with the cornstarch. Shake off excess before frying. Cook the shrimp, about 5 minutes, turning once. Remove from the pan and drain the shrimp on paper towels. In a bowl, toss the shrimp and pepper pieces in the mayonnaise sauce to coat. Add the glazed walnuts into the mixture. Serve on a bed of lettuce.
