Bharli Vangi (Stuffed Brinjal)

Grind roasted coconut, peanut,ginger, garlic. Add all masalas and salt in it. Mix well. Give four cuts to brinjals and stuff masala to it.

Heat oil in a pan. Add mustard seeds, jeera,hing,curry leaves and onion. Saute until it becomes golden. Add chopped tomatoes. Saute well. Add stuffed brinjals to it.

Saute for a minute. Add leftover masala and mix well.
Add hot water. Add jaggery. Cover a lid and cook brinjals soft. Add chopped coriander.
Seve with chapati or bhakari.
