Assemble all ingredients. Chop onion.

Crumble and fry the ground beef, add the onion and garlic, break up the beef and fry till browned and the onions are translucent. Add the chili seasoning packet and the chili powder and bloom in the beef and aromatics, momentarily.

Add all the canned ingredients and water. Bring to a boil and lower to a simmer. Stir often, and low simmer for around two hours. Taste at end, and adjust acidity with a touch of sugar.

Serve with grated Pepper Jack cheese and Frito's Corn Chips to top.
