Khaja
Our Rathyatra celebration is incomplete without this Khaja. #RYS
Steps

In a mixing bowl take flour, 2tbsp ghee & salt. Mix like breadcrumbs. Add water gradually and make a not too hard or too soft dough. Rest for 30 mins.

In a pan add sugar & a cup of water. Add cardamom seeds/ powder. Let it boil & make a one string consistency sugar syrup. Let it cools down.

Make small balls of equal size from the dough. Sprinkle flour and flatten each ball into roti.

Now place a roti. Rub 1tsp ghee over it. Sprinkle flour all over it. Stack a roti over it. Repeat the process till the last roti.

Press the pile of rotis a little. Now start rolling tightly from one side. Rub little water at the end portion. Press. Cut the roll into equal size.

Sprinkle flour & flatten each cut out portion. Do not press hard. Heat oil. And deep fry each on low flame. Fry in batches.

Dip each khaja when it is little warm & the syrup cools down. Enjoy 😍
