Spinach & Lime mini cakes

A vegertarian cafe in my area had a large cake sold in slices, and I've always wanted to make one. Once I've made the batter I've chose to do mini cakes but you can do a big one. They taste delicious 😋.

A vegertarian cafe in my area had a large cake sold in slices, and I've always wanted to make one. Once I've made the batter I've chose to do mini cakes but you can do a big one. They taste delicious 😋.

Boil the spinach, when it's done strain and set aside some of the juice for some icing. Blitz the spinach.

Add the eggs and lime juice and oil to the batter.

Mix altogether.
Then put the flour in bowl with all the dry mixture. Add the liqiflav.
Then add a little fruit. Mine was a few cherry's de stoned and 2 strawberries chopped. Then add the vanilla syrup optional. - 4
Then I added a little milk to get the right cake texture. Then I put the mix in ramakins and put in oven on a medium heat.

You can make a large cake, I have mixture left over for the next day.
While the cakes cooking make icing for the top.
Spinach juice, lime juice and icing sugar. Set aside until cakes are cool. - 6
When the cak s are cool slice in half and fill with your filling, cream or jam.
I made cherry butter cream. Marg icing sugar and chopped cherries. - 7
Cover cake with icing and decorate, make yourself a brew and enjoy.🍰😋
