Bread Upma

Bread Upma is a South Indian breakfast recipe made with bread, onion, tomatoes, spices, nuts and herbs. Since tempering used here is similar to Upma, it is called bread Upma. This simple, tasty and easy 15 minutes recipe will make an amazing breakfast or snack on the go.
Bread Upma is prepared from left over bread which is toasted and then fried with vegetables and spices. It is highly recommended to toast the bread before adding to the masala as it doesn’t turn soggy and retain its shape. Onion and tomatoes form the base for bread Upma, so do not skip. Other vegetables like carrots, beans, potato, green peas, sweet corn, capsicum can be added. You can even add eggs into masala and scramble it before adding bread cubes.
Bread Upma can be served at breakfast or as a snack with coffee/tea.

Steps

In a toaster or on Tawa toast the bread until golden brown and crispy. Cut bread slices into cubes and set aside.

In a pan heat oil and add in mustard seeds, let it splutter. Add in sliced onion, crushed ginger, slit green chili and sauté until onions are translucent. Add in chopped tomatoes, cover and cook until tomatoes soften.

Add in turmeric powder, Kashmiri chili powder and sauté on low flame for a minute. Add in sliced capsicum and continue to sauté, retaining crunchiness of capsicum.

Add in 1/8 cup water, mix well and let it bubble up.

Add in toasted bread pieces, gently toss it with the masala. Cover and simmer for 2 minutes for the bread to absorb the masala. Switch off the flame. Squeeze in lemon juice and garnish with coriander leaves. Toss it well.

Serve Bread Upma with some fried cashews and lemon wedge.
