Ingredients

  1. Crown roast of lamb
  2. Salt pork
  3. 1medium sized onion,chop
  4. 5 tablespoonsbutter melted
  5. 1 cupchopped celery
  6. 1/2 cupdried chopped apricots
  7. 4 cupssoft bread crumbs
  8. 1 teaspoonsalt
  9. 1/4 teaspoonpoultry seasoning
  10. 1/4 cupwater

Cooking Instructions

  1. 1

    Prepare roast. Put salt pork around roast to keep from charring. Brown minced onion in butter,add celery,apricots,crumbs,seasoning and water.
    Fill crown with mixture. Roast in open roasting pan. @350f. About 21/2 hours.
