Ingredients

2 servings
  1. Rice
  2. 1/2 cupsbasmati rice
  3. 1 tbspturmeric
  4. Chicken
  5. 1 tbspTomato-red pepper sauce (substitute with dried tomatoes pesto)
  6. olive oil
  7. dried garlic
  8. italian seasoning
  9. 1 tbspcoconut yogurt (substitute: plain yogurt)
  10. 2 tbspsesame seeds (optional)
  11. Miso-Tomato Aubergine
  12. 1eggplant
  13. 1 tbspyellow miso
  14. 1 tbspTomato-red pepper sauce (substitute with dried tomatoes pesto)
  15. 1/2medium size yellow onion
  16. 2medium tomatoes
  17. olive oil
  18. Salad
  19. Shredded iceberg lettuce
  20. cherry tomatoes
  21. 1/2English cucumber
  22. Black olives
  23. Feta
  24. White vinegar
  25. Salt
  26. Lemon juice

Cooking Instructions

    Rinse the rice and boil it. It takes about 25 mins to cook. Once water evaporates add the turmeric and reduce heat.

    While rice is getting ready, cut the eggplants into cubes. I like to keep them striped.I like to salt them before cooking, so they dont get soggy.
    💡: if your eggplants have seeds, soak them in water and gently pat to dry. It should help to remove the bitter taste.

    Saute your sliced yellow onions with your tomato pesto sauce. Once your onions are soft, add in the miso and some warm water (just to melt the miso). Then add the peeled tomatoes that you cut in the 4. Let the sauce simmer. If tomatoes are breaking you are on the right track.

    Cook the chicken with the seasoning. Yogurt helps to keep the chicken moist. I've tried adding it before cooking or after chicken cooked througly and I get similar results. So this is up to you.

    Prep the salad with all ingredients.

    Add everything to your bowl and voila! I'm lazy to make the bowl sexy but feel free to gey creative with your plate 🍽
