Cooking Instructions

Bhatura recipe :

First take a large bowl add all the ingredients one by one and mix it well. Then add yoghurt and mix well making sure everything is combined well. Then add water as required and knead dough.

Knead to smooth and soft dough. Then grease the dough with oil cover and rest for 2 hours.

After 2hours knead the dough slightly. Pinch a ball size dough and make a ball without any cracks.

Roll slightly thick apply oil to prevent from sticking. Drop the rolled dough into the hot oil fry it flip over and fry until golden brown. Finally drain off the bhatura and is ready to enjoy with Chole masala.

Soaked 1 cup Chana in enough water for overnight.

First take a pressure cooker add soaked Chana and 3 cup of water. Cover and pressure cook for 5 whistle. One the pressure releases open the cooker transfer the Chana into the bowl.

Then in a same cooker heat 2 oil, cardamom, cloves sauté on low flame until the spices turn aromatic.

Then add onion, ginger garlic paste and sauté until onion turn golden brown. Then add turmeric powder, chilli powder, coriander powder, cumin powder, garam masala and salt. Sauté on low flame until the spices turn aromatic.

Next add tomato purée, green chilli, coriander leaves, curry leaves and cook it few minutes. Then add boiled Chole with water and mix well. Adjusting consistency by adding water if required.

Finally cover and pressure cook for 2 whistle.once the pressure release open the cooker and add 1 tsp lemon juice mix it well.open cook it for few minutes. Turn off the flame.

Chole masala is ready to enjoy with some onions and lemon.
