chole Bhature is a good dish popular in the northern areas of the subcontinent. It is a combination of Chana masala and bhature / puri , a fried bread made from maida . It is known as a typical Punjabi dish . This is my sister recipe . This one has a homely taste and flavor . Taste is very good . Let’s try it your home and enjoy .

Ingredients

  1. For bhatura
  2. 2 cupsall-purpose flour / maida
  3. 2/3 cupsRava/ semolina
  4. 1 tbspghee
  5. 1 tbspsugar
  6. 1 tspsalt
  7. 1 tsp Baking soda
  8. 1 cupyoghurt
  9. 1 tspoil
  10. As RequiredWater as required
  11. For pressure cooking chole
  12. 1 cupChana dal (soaked overnight)
  13. 3 cupwater
  14. For Chole preparation
  15. 2 tbspoil
  16. 3cloves
  17. 3cardamom
  18. 1 big onion (chopped)
  19. 1 big tomato (purée)
  20. 1 tspginger garlic paste
  21. 1/4 tspturmeric powder
  22. 1 tspchilli powder
  23. 2 tspcoriander powder
  24. 1 tspcumin powder
  25. 1/2 tspGaram masala powder
  26. 4green chilli
  27. 2 tbspchopped coriander leaf
  28. 1string curry leaves
  29. 1 tsplemon juice
  30. As per tasteSalt
  31. As RequiredWater

Cooking Instructions

    Bhatura recipe :

    First take a large bowl add all the ingredients one by one and mix it well. Then add yoghurt and mix well making sure everything is combined well. Then add water as required and knead dough.

    Knead to smooth and soft dough. Then grease the dough with oil cover and rest for 2 hours.

    After 2hours knead the dough slightly. Pinch a ball size dough and make a ball without any cracks.

    Roll slightly thick apply oil to prevent from sticking. Drop the rolled dough into the hot oil fry it flip over and fry until golden brown. Finally drain off the bhatura and is ready to enjoy with Chole masala.

    Chole recipe:

    Soaked 1 cup Chana in enough water for overnight.

    First take a pressure cooker add soaked Chana and 3 cup of water. Cover and pressure cook for 5 whistle. One the pressure releases open the cooker transfer the Chana into the bowl.

    Then in a same cooker heat 2 oil, cardamom, cloves sauté on low flame until the spices turn aromatic.

    Then add onion, ginger garlic paste and sauté until onion turn golden brown. Then add turmeric powder, chilli powder, coriander powder, cumin powder, garam masala and salt. Sauté on low flame until the spices turn aromatic.

    Next add tomato purée, green chilli, coriander leaves, curry leaves and cook it few minutes. Then add boiled Chole with water and mix well. Adjusting consistency by adding water if required.

    Finally cover and pressure cook for 2 whistle.once the pressure release open the cooker and add 1 tsp lemon juice mix it well.open cook it for few minutes. Turn off the flame.

    Chole masala is ready to enjoy with some onions and lemon.
