Bánh Dầy with mung bean filling is a delicious, soft, and chewy traditional treat that brings back memories of home, no matter how far away you are. It's a special dish when living abroad, so I had to make it myself whenever I craved it.

Ingredients: 2 1/2 cups glutinous rice flour (about 350 grams), 1 tablespoon rice flour (optional), 1 1/4 cups split mung beans (about 250 grams), 2 scallions, finely chopped, 3/4 cup sugar (about 150 grams, adjust to taste), 1 cup to 1 cup plus 1 tablespoon boiling water (230–250 ml), a pinch of salt, vegetable oil.

Rinse the mung beans, then soak them in water for 3–5 hours. Drain and steam the mung beans until cooked through.

Once the mung beans are cooked, transfer them to a food processor and pulse until mostly smooth (they don't need to be completely pureed). Divide the mung beans evenly into two bowls. In the first bowl, mix in the sugar and a pinch of salt. In the second bowl, add just a pinch of salt and mix well.

Heat a skillet over medium heat, add 1 tablespoon of vegetable oil, and sauté the chopped scallions until fragrant.

Turn off the heat, then add the mung beans from the first bowl to the skillet and stir until the scallions are well combined with the mung beans.

In a large bowl, combine the glutinous rice flour and a pinch of salt. Gradually pour in the boiling water while stirring with a spoon until a dough forms. Transfer the dough to a work surface and knead until smooth. (If you have a stand mixer, you can use it to make the dough softer and easier to knead.)

Divide both the mung bean filling and the dough into equal-sized balls.

Flatten each piece of dough, place some filling in the center, and carefully wrap the dough around the filling, sealing it completely.

The dough may be a bit sticky, so rub a little vegetable oil on your hands to prevent sticking.

Bring a large pot of water to a boil, add a little vegetable oil, and gently drop the cakes into the water. When the cakes float to the surface, let them cook for another 4–5 minutes before removing them. (Tip: Use a wide pot so the cakes cook more evenly and quickly.)

Once cooked, use a slotted spoon to remove the cakes and let them drain briefly. Roll the cakes in the reserved mung beans from the second bowl so they are evenly coated.
