Steps

Wash the carrots and peel them and grate them.

Now heat a kadhai, add 2 tbsp of Desi ghee. Now slightly fry the cashews then transfer to a small bowl. Now in that kadhai, add 1/2 tsp sugar. Caramelize it. Then add grated carrots in to it. Saute for about 5-7 minutes.

Now add milk. Mix well. Then add sugar in the above-mentioned quantity. Mix again. Add 2-3 pinch of salt just to balance the taste of sugar. Cover it with a lid. Keep in low flame for 10 minutes. Stir in between..

Next, add green cardamom powder and mix well. Again cover it for 3-4 minutes. Then remove lid and add previously fried cashew nuts. Mix well. Now lastly add 1/2 tsp of Desi ghee and mix well. Cover it for 2-3 minutes. Make sure flame should be low. Switch off the flame. Rest it for 5 minutes. Then serve or else let it cool in room temperature. Then keep it in refrigerator for 1-2 hr. then serve.
