My Honey & Orange Cake 🍰 🍯

This beautiful rich, moist, dense cake with flavours of fragrant orange & floral honey is a gorgeous sweet treat for any occasion and I'd say it's more of a pudding than a traditional cake sponge. Recommend using really good quality honey for this one to obtain maximum flavour.
Note: This cake is wonderful served warm with a scoop of vanilla ice cream or a dollop of Greek yogurt! Simply microwave for a few seconds to enjoy warm. 😊

Preheat oven to 180 (fan). Grease a square cake tin with a little butter. Set aside. Cream together the softened butter with the vanilla extract and the sugar.

Crack in the eggs & mix well. Now add the cinnamon, orange zest, salt and Greek yogurt. Stir well until completely combined. Add the flour and fold through until mostly incorporated then mix through well - pour in the milk and stir well again until a thick smooth batter is created.

Spoon the batter into your cake tin and smooth over evenly using a metal spoon and silicon spatula so you can work it right up to the edges neatly. Bake on middle shelf until golden on top for approx 35 - 40 minutes or until a toothpick comes out clean from the centre.

Make up the honey syrup by mixing together the honey & orange juice. Heat in a small saucepan until warm - do not boil or simmer. Cut the honey Cake into squares whilst still in the pan then pour over the warm syrup. Leave to cool for a few minutes to absorb all the honey then serve up & enjoy! :)
