Litti Chokha is a delicacy from Bihar, which is popular also in Jharkhand and Eastern Uttar Pradesh
. Litti is prepared from a dough stuffed with Sattu filling, then roasted over a coal. Chokha is prepared from brinjal , tomato, potato. Litti is served with various chokha and spicy green chutney.
Litti chokha is now famous not only across Indid but also eaten in Mauritius, Fiji, Suriname, You.K where people from Bihar, You.P., Jharkhand have migrated and they took their cuisine with them and become popular.

For litti:
1. Take all ingredients of litti in a mixing bowl. Then knead semi stuff dough by adding a little water.
For stuffing : add an mix all ingredients of stuffing properly and keep aside for a few minutes. - 2
Now divide the dough in equal parts. Take one and flatten it on your palm. Add prepared sattu filling and seal the litti properly. Make sure that outer layer is not too thick. Continue and prepare remaining littis like this.

Litti can be cooked in tandoor, but at home we can cook on gas stove. Put papad mesh on stove and cook litti on low flame, from each side (check image)

Now to prepare chokha, add all ingredients in mashed potato and mix well.

For roasted tomato chutney, we have to roast tomato first. Again you can roast it in tandoor, on open flame or in oven. I have roasted it in oven, by pricking tomatoes, and applying oil on them. Then bake it for 35 minutes on 200℃ in preheated oven. I also did same with green chillies and also roast garlic for green chutney along with tomatoes and green chillies, but remove green chilli and garlic after 10 minutes, else they will burn.

Once everything is roasted, cool them well. Peel off the tomatoes and roughly chop them along with green chillies. Then mix each ingredients of roasted tomato chutney.

For coriander chutney, add all ingredients in a mixer jar and grind it well.

Serve litti with chokha, tomato chutney, green chutney with some cucumber, onion and green chillies. For serving, break litties add some ghee, chokha and both chutneys and enjoy.

Note:
1. Can fry litti in ghee.
2. Chokha can be prepared from brinjal also or you can prepare mix chokha too.
