Ingredients

  • For litti
  • 2 cupwheat flour
  • 2 tbspghee
  • 1 tspsalt
  • 1 cupwater
  • Litti filling
  • 2 cupssattu
  • Mango or chilli pickle masala
  • 2 tbspMustard oil
  • 1 tspkalonji
  • 1 tspajwain
  • 1medium onion, finely chopped
  • 2-3chillies, chopped
  • 1lemon juice
  • Salt to taste
  • For chokha
  • 1brinjal
  • 2boiled potatoes
  • 2medium tomatoes
  • 3-4green chillies
  • 4 clovesgarlic
  • 1medium onion chopped
  • Some Mint and coriander leaves, chopped
  • 1 tspRoasted zeera powder
  • 1 tspchaat masala powder
  • Salt to taste
  • 1 tbspmustard oil
  • For mutton stew
  • 1/2 kgmutton
  • 3-4onions, roughly chopped
  • 2 tbspginger garlic paste
  • 2-3dried red chilli
  • 1 stickcinnamon
  • 1small cardamom
  • 1big cardamom
  • 2-3cloves
  • 1bay leaf
  • 3-4peppercorns
  • 1/2 tspTurmeric powder
  • 1/2 tspgaram masala powder
  • 2green chillies
  • 2 tbspmustard oil
  • Salt to taste

Steps

    For litti, knead the dough with the given ingredients and let it rest for 15-20 minutes.

    Now for the filling, combine all the ingredients listed under the filling section.

    Now make small round balls of the dough and fill the sattu mixture inside and enclose it as shown in the picture.

    Heat up pressure cooker, apply oil on the sides and base and put littis inside the cooker.

  5. 5

    Remove the whistle and rubber and close the lid. Cook for 5-10 minutes on low flame and then turn the littis and again cook for 20 minutes on low flame till cracks appear on them. This means littis are ready. Drizzle desi ghee on top and serve

    For the bharta, roast brinjal, red chillies, garlic cloves and tomato on stove top.

    Let it cool and then peel the skin of tomato and brinjal.

  8. 8

    Mash the potato, tomato, brinjal with the help of a masher.

  9. 9

    Add all the other ingredients.
    Your chokha is ready

  10. 10

    For the stew, in a pressure cooker,
    Heat musturd oil, add the mutton pieces and saute for a while.

    Now add all the khada garam masalas, onion, dried red chilli, salt and turmeric.

    Cook for 2-3 whistles on medium flame.

  13. 13

    Now open the lid and cook the mutton for 5- 10 minutes on high flame till the oil starts to leave the side.

    Lastly add whole green chillies and garam masala powder and serve hot!

  15. 15

    Stew is optional in this recipe.
    You can enjoy litti chokha without the stew also.
