Bihari Litti Chokha & Chutney

Litti Chokha is a traditional and popular dish of Bihar and Jharkhand. The flavours of this dish are great and the stuffing in the dough balls adds oomph of flavour to the Litti. it’s a special dish that’s made in most Bihari households and the whole family comes together to enjoy this ghee-dunked stuffed wheat balls(litti) .
The litti is made out of wheat flour and is stuffed with sattu and chokha is the side dish made using eggplant, potato or tomatoes the spicy coriander & tomato Chutney balance the flavor and spiciness. In some regions of Bihar, the Litti is also served with spicy chicken curry.

Cooking Instructions

Firstly, prepared the sattu stuffing.
In a food processor add onion, ginger, garlic, and chili and blend until the veggies are finely chopped. Then, in the same food processor add chana sattu, carom seeds, black Cummin, salt coriander leaves, pickle, oil, and 1tbsp water. Blend until everything mix together.
✔(You can also prepared this stuffing without a food processor, only you need to use finely chopped veggies and Blend it with all other ingredients.)

Now to make chokha and chutney... Firstly wash the eggplant and apply little mustard oil over it, and cut them slightly to check it is fine from the inside. then poke the garlic cloves as shown in the image.
Roast the eggplant and tomatoes over direct flame until nicely charred.
Remove them to a plate and let cool. - 3
Remove the skin of the eggplant, garlic, and tomato and mash them nicely along with boiled potatoes. Now add salt, chili, mustard oil, and chopped coriander leaves. Mix everything well. Adjust salt and chili as per taste.
Chokha is ready. - 4
For chutney.. I a grinding jar add all the ingredients and blend them till smooth. Adjust salt as per taste. Chutney is ready.

In a mixing bowl add in flour, salt carom seeds, and ghee, and mix everything well.
Now add milk and combined it well with flour. Make a tight dough by gradually adding water little by little.
Once the dough is ready add 1/2tsp ghee and knead it again.
Keep it aside for 15-20 minutes. - 6
Further, Take out a ball from the dough. Spread the dough and
Place 1-2tbsp sattu filling in the center.
Gather the sides to cover and seal the stuffing. Pinch off excess if any. Similarly, make all the litti balls. - 7
As the balls are getting formed, you stoke a “barbecue” with dried cow dung cakes (gointha). The sattu balls are then inserted into the smoldering fire and roasted in until golden and crisp turning around in between.
✅️(To get authentic traditional taste You can either use a cow dung cake (gointha) or coal to make a barbecue. You can either use a gas tandoor . Else an easier option is to heat oil in a kadhai and fry the Litti till golden brown.) - 8
Take the Litti balls out from the heat and remove the remaining ashes.
Dipped the littis on melted ghee and serve them together with the Chokha and Chutney.
