Soak yellow matar overnight. In pressure cooker, give 4 whistles.keep aside

Now in a deep pan add oil, once hot add cooked matar, turmeric powder,red chilli powder, Pani Puri masala.mix well and cook for 10 minutes. Allow it to cool down

Chop boiled potatoes,add salt, Red chilli powder,1 tspoon oil.mix well and keep aside. Chop all veggies

Heat oil in Deep pan, fry market brought puries. Cook tamarind paste, dates pulp Jaggery,saunth, Red chilli powder for 5 minutes. Cool it and blend to fine puree. Sweet chutney is ready

In mixer jar add coriander leaves, mint leaves, green chillies,salt,chat masala, ginger.salt as per taste. Blend to fine paste. Green chutney is ready.

Now assemble all ingredients. First break puries, add potatoes, ragda, chopped onion, tomato, carrot, green chutney, sweet chutney. Sprinkle Sev on the top. Garnish with coriander leaves.

Serve and enjoy.
