Ingredients

2 people
  • 100g/4oz Self-raising flour
  • 1 pinchsalt
  • 50g/2oz shredded suet
  • 50g/2oz caster sugar
  • 50g/2oz currants
  • 50g/2oz mixed peel
  • 1egg, beaten
  • 4 tbsp.milk

    Thoroughly grease a 600ml/ 1 pint pudding basin

  2. 2

    In a large mixing bowl, sift together the flour and salt

  3. 3

    Add the suet,sugar, currants and mixed peel. Mix together thoroughly with a large wooden spoon

  4. 4

    Mix in the egg and sufficient milk to produce a smooth dropping consistency

  5. 5

    Place the mixture into the prepared pudding basin. Cover with some pleated greaseproof paper and seal with kitchen foil

    Bring a large saucepan of water to the boil. Reduce the heat to a simmer. Add the pudding basin to the bowl. Steam the pudding for about 1 1/2 hours.

  7. 7

    Turn out the pudding onto a large plate. Spoon into individual bowls and serve hot with custard or golden Syrup.

Just over a month later did make a Spotted Dick Pudding with homemade Custard - did not exactly cook the Pudding Cake for One hour and 30 minutes was late in trying too thicken my homemade Cornflour egg yolk Custard . I used Beef Fat Suet rather than Vegetable Suet . Pudding was hot in the middle, not quite done, did briskly cook. Do think the Pudding Cake needs 2 hours, rather than 1 hour and 30 minutes
