When ya gotta hankering for some chocolate and only thing in the pantry is 100% powdered cocoa. This is a quick and easy recipe. NOTE: Our my grandgirl is allergic to nuts, so those aren’t added and my hubs is lactose intolerant, so I always substitute with margarine, unless it’s a buttermilk pound cake, lol

Ingredients

25 minutes
  1. 2squares baking chocolate or 2 level Tbsp cocoa + 2 Tbsp shortening + 3.5 tsp sugar
  2. 3/4 cmargarine or butter, your choice
  3. 3/4 call purpose flour
  4. 1/4 tspvanilla
  5. 2eggs
  6. 1 csugar
  7. 1/2 tspsalt
  8. 1.2 c chopped nuts (optional)

Cooking Instructions

25 minutes
  1. 1

    Melt margarine & chocolate squares in microwave or over double boiler. *if using cocoa, mix with dry ingredients.

    Mix dry ingredients together, add melted margarine & vanilla. Stir well, add slightly beaten eggs. Mix well.

    Add nuts.

  4. 4

    Place in square baking pan.

  5. 5

    Bake @ 350* for 25 minutes.

    When done, let cool completely before cutting in squares.

    Variation: right after removing from oven, scatter some favorite (chocolate, butterscotch, vanilla) chips over top, cover with foil, let sit for a few minutes, then spread over top evenly.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
