The best cinnamon buns you will ever eat.

I made half of the dough and I got 8 buns out of it. If you want that too, just half all the ingredients. I used a teaspoon oil instead of the yolk and it worked perfectly fine.

Ingredients

8 buns
  1. 500 gflour
  2. 1 cubefresh yeast (21g) or dry
  3. 230 mlmilk
  4. 1eggyolk
  5. 80 gsugar
  6. 100 gwarm butter
  7. 2 tbswater
  8. 1 pinchsalt
  9. Filling
  10. 130 gButter
  11. 100 gsugar
  12. 2 teaspooncinnamon
  13. Frosting
  14. 150 gcream cheese
  15. halfa lemon
  16. 70 gpowdered sugar

Cooking Instructions

    Mix the yeast if fresh, with 2 tbs of the sugar and 2 the water. Let it sit for 30 mins.

    If you use dry yeast, just put it to the flour and mix well.

    Mix all the dry ingredients.

    Add soft butter, yolk and milk/milk mixture.

    Knead the dough well for 8 to 10 mins. I used my hands, if you have a kitchen machine, its way easier.

    Sprinkle bowl and dough with a little flour then set aside in a warm place until it doubled in size. I always put it in a bowl with a kitchen towel on top. It takes around 30 mins to 1 hour. You can turn on the oven on small heat -> 30°C to make the process faster.

    Next prepare filling. Put the butter out of the fridge to let it get soft. Mix sugar with cinnamon.

    When the dough is ready, spread out with a rolling pin in a rectangular shape.

    Spread out the butter, sprinkle sigar mixture and roll it.

    Cut the noodle first in the middle, then again the outer two parts in the middle, then again until you have the thickness of the buns you like. With this method, it's easier to get similar sized buns!

    Put them in a baking dish or on a baking sheet and into the oven. Let them rest again for 20 to 30 mins. You can turn on the oven on small heat -> 30°C to make the process faster.

    If you like, brush with milk or mixed egg to make them look darker and glossy.

    Then turn on the oven to 180°C two sided heat. Put them in for around 30 to 35 mins. Check on them!

    Meanwhile, prepare the filling. Mix powdered sugar, lemon and cream cheese with a handmixer.

    When the buns are ready, spread frosting on top, and ready to enjoy!
