First of all, peel the potato, purple yum, yam and cut them into large pieces. Also clean papadi, peas, pigeons peas and green chickpeas. Finely chop the tomatoes, fenugreek leaves and coriander. Grind the ginger-chilli-garlic.

Add green peas, green chickpeas, pigeons peas, papdi, salt and soda in a cooker and blow one whistle.

Mix all the ingredients arranged for Muthiya and add half cup of water into it, make a hard dough, prepare Muthiyas and fry all well.

Now soak prepared Muthiyas in hot water and take out to the bowl.

Fill in the some portion of prepared dough into brinjals and chillies.

Fry at medium flame along with that also fry potatoes, yum and purple yum.

For 1st tadka, add red dried chillies, tamalpatra, ajwain, hing then add boiled vegetables, tomatoes, salt, ginger chili garlic paste, dry masalas into the cooker and saute until the oil released.

Add 1 cup of hot water, fried vegetables, green garlic, lemon juice, salt, sugar mix all well and let it steam for 10mins.

After 10 mins, add prepared Muthiyas and again steam for 5mins, then turn off the stove.

Now, for 2nd Tadka, add all the ingredients arranged in to the saucepan, pour over the ready Undhiya Mixture.

So, Undhiyu is Ready to Serve.
