Chicken Kosha or Chicken Bhuna Masala is a Bengali way of cooking chicken in a rich creamy gravy.The word 'Kosha'means dry or a gravy which is quite dry in consistency where juicy chicken pieces are slow cooked with different spices.Serve this delicious Chicken Kosha with roti, luchi, paratha, poori,steamed rice or with Bengali misti Basanti Pulao.

Chicken Kosha or Chicken Bhuna Masala is a Bengali way of cooking chicken in a rich creamy gravy.The word 'Kosha'means dry or a gravy which is quite dry in consistency where juicy chicken pieces are slow cooked with different spices.Serve this delicious Chicken Kosha with roti, luchi, paratha, poori,steamed rice or with Bengali misti Basanti Pulao.

Make a paste of roughly chopped onion,yogurt,ginger garlic paste and green chillies.Marinate chicken with 1 tbsp yogurt,salt and 1 tbsp mustard oil for an hour.Mix well and set aside.

Make a homemade garam masala powder by dry roasting 1 tbsp cumin seeds,1 tbsp coriander and fennel seeds,3 bay leaves,2 dry red chillies,7-8 peppercorns,5-6 cardamoms,1 stick cinnamon,4-5 cloves.Cool and grind to a fine powder.Store in an airtight container. Use 1 tsp of this powder in veg or non-veg curries.

Heat 3-4 tbsp mustard oil in a wok or pan.When the oil is hot,fry the potatoes till golden brown.Remove from oil and set aside.Temper the remaining oil with a sprinkling of cumin seeds,bay leaf and half crushed whole garam masala and black pepper.When they crackle, lower the heat and add sliced garlic and saute.When the garlic emits aroma add chopped onion and fry till light brown.

Add Kashmiri red chilli powder.Saute and add the chopped tomato,salt and pinch of sugar to taste.Saute till tomato is mushy.Add tomato puree, ground onion,ginger garlic green chilli paste and all the dry masalas besides garam masala.Fry for 2 minutes. Add the marinated chicken and fry with the masala on medium heat for 7-8 minutes.Add the potatoes and toss.

Add 1/2 cup warm water.Besides chicken releases lots of water.Cook covered on medium to low flame for 15 minutes.Cook till chicken and potatoes are perfectly cooked and gravy coats chicken.

Finally add 1/2 tsp homemade garam masala and drizzle a teaspoon of ghee.Mix to combine all.Fry on high flame till oil separates.Garnish with chopped coriander and onion rings and serve with roti,puri, paratha,steamed rice or Bengali Basanti Pulao.
