Stuffed Peppers with Ground Beef and Quinoa

Stuffed bell peppers are popular in many countries. The difference comes from the seasonings or what you use for the filling. I made these as the name suggests, stuffed with ground beef, some vegetables, and quinoa.

Measure and chop all the ingredients for the recipe.

Heat a skillet over medium heat without oil. Add the ground beef and brown it.

Add and cook the rest of the vegetables with the herbs, salt, and pepper.

Add the quinoa and water, cover, and cook for 10 minutes.

Stir in the tomato sauce and mix well.

Cut off the tops of the bell peppers and remove the seeds and membranes inside.

Fill the peppers with the meat mixture.

Spread some tomato sauce on the bottom of a baking dish and place the stuffed peppers on top. Cover and bake at 350°F (178°C) for about 45 minutes. The peppers should be tender but not overcooked.

Sprinkle shredded cheese on top and return to the oven until the cheese melts.

I served them with mashed potatoes and tomato sauce.
