First boil all the vegetables 🥕🥔(cauliflower, french beans, carrots, potatoes 🥔, cabbage), cut fresh green capsicum 🫑 into cubes, keep aside. Mash boiled vegetables and keep aside.

Heat ghee, a pinch of asafoetida, ginger garlic paste 🧄 saute for a few minutes, add finely chopped onions 🧅, allow the onion to turn translucent pink, add finely chopped green capsicum 🫑 and mix well, add finely chopped tomatoes 🍅, salt 🧂 mix well, when ghee comes out from side, add Mumbai ' pav bhaji' masala, finely chopped green chillies, red chillies powder 🌶️, coriander & cumin powder and mix well, add fresh peas.

Add turmeric powder, garam masala powder, cumin seeds, cloves, dry mango powder 🥭 and mix well, add mashed vegetables 🥕, let it simmer for 6-8 mins, then add boiled & mashed potatoes 🥔, cook for 9 mins, remove from heat.

Add in serving dish and add freshly squeeze lemon juice 🍋, And keep aside, if desired add 2-3 tbsp butter on top.

For pav/ bread buns: heat a pan, add butter/ oil 🌻, slice the bread buns from the center and place them facing inwards, turn them around in a min and let the outside turn golden brown. Garnish 'bhaji' with chopped coriander leaves 🌿, lemon wedges 🍋, slices of onions & tomato 🍅 if desired, serve hot with toasted 'pav'/ bread buns.
