Cupcakes are a favourite of many a child. These wonderful mouthfuls of loveliness are so versatile as can be flavoured with anything and everything.

G&T cupcakes are for grown-up children as the soft sponge and creamy buttercream are flavoured with gin and tonic and then topped with crunchy dragées and hundreds and thousands.

Depending on the gin used, the flavour can be quite different. Gin is a blend of grain-based malt wine and a neutral spirit infused with juniper but many distillers add varying ingredients to give a distinct taste. Opihr gin is flavoured with exotic botanicals; cubeb berries from Malaysia, coriander from Morocco and cardamom from India and provides a spicy kick whereas Tanqueray is flavoured with grapefruit, orange, lime and chamomile flowers and imparts floral notes.

Confectionery-coated pieces have been made since the beginning of the 13th century. French dragées (sugar pearls) appeared at weddings and christenings from the 16th century and were also found on the tables of princes as they are said to increase fertility.

Hundreds and thousands have been around since the beginning of the 20th century. Originally chocolate in colour, they were named hagelslag (hailstones) by their inventor, a Dutch confectioner, Erven H de Joung and intended as a simple topping for bread and butter. By the 1930s they had travelled across the pond to New England and started their climb to rainbow fame as decoration for cakes and ice cream.

Ingredients

20 minutes
6 cup cakes
  • Cupcakes:
  • 75 gunsalted butter
  • 75 gcaster sugar
  • 1 1/2medium eggs
  • 100 gself raising flour
  • 2 tbspsgin
  • 1 tbspstonic
  • 1/2lemon
  • Glaze:
  • 25 ggranulated sugar
  • 2 tbspsgin
  • 1 tbspstonic water
  • 1/2lemon
  • Buttercream:
  • 75 gunsalted butter
  • 150 gicing sugar
  • 2 tbspsgin
  • 1 tbspstonic
  • grated zest of ½ lime
  • Decoration:
  • grated zest of ½ lime
  • hundreds and thousands
  • dragées (sugar pearls)

Steps

20 minutes

    Heat the oven to 160 degrees C fan and line a muffin tin with 6 cases.

    Cupcakes: Beat the butter then add the sugar and beat until light and fluffy. Add the eggs and beat again, then add the gin and tonic and self-raising flour and beat slowly to combine. Spoon the mixture into the cases and bake for 20 minutes until a skewer comes out clean.

    Glaze: Cut the lemon in two. Juice one quarter and add to the tonic water and sugar in a small pan. Bring to the boil, then turn down the heat and simmer for 3-5 minutes until it becomes syrup-like. Slice the other quarter and add to the syrup. Remove from the heat, add the gin and stir again. Allow to cool, then strain.

    Take the cupcakes out of the oven and brush the surface of each one with some of the gin and tonic syrup. Let it seep in then brush again with more syrup. Allow to cool in the tray for about 10 minutes, then transfer to a wire rack to cool fully before icing with buttercream.

    Buttercream: Beat the butter then gradually beat in the icing sugar until smooth and creamy. Add in the gin and lime zest.

    Decorate with hundreds and thousands, dragées and lime zest.
